The Hangry Joe's Origin Story
Hangry Joe's was born in San Marcos, TX, out of one simple but powerful craving: hot chicken done right. Founder Joe Cardenas spent years perfecting his signature spice blends — testing heat levels, experimenting with brines, and hunting down the perfect crunch — all from a home kitchen that smelled incredible and set off the smoke alarm regularly.

What started as weekend pop-ups and catering for local events quickly became something bigger. Word spread fast through the Texas Hill Country. People drove hours for a taste of hangry joe's hot chicken. By 2021, the demand was undeniable — Hangry Joe's opened its first brick-and-mortar location at 301 N Guadalupe St in San Marcos, and the community showed up in force.
Today, Hangry Joe's continues to serve United States with the same passion, the same recipes, and the same commitment to bold, uncompromising flavor that started it all.

The First Batch
Joe Cardenas starts experimenting with Nashville-style hot chicken recipes in his San Marcos home kitchen. The spice blend takes 47 iterations before he's satisfied. Neighbors begin showing up uninvited at dinnertime.
Pop-Up Beginnings
Hangry Joe's launches its first pop-up at a local San Marcos farmers market. The line wraps around the block by 10am. All 200 pieces sell out in under 2 hours. The waitlist for the next event fills in minutes.
First Brick-and-Mortar
Hangry Joe's opens its first permanent location at 301 N Guadalupe St, San Marcos, TX. Opening week draws a 3-hour wait time and earns a feature in the Austin Chronicle's Best New Restaurants list.
Catering Takes Off
Hangry Joe's launches its full-service catering division, bringing fiery hot chicken to corporate events, weddings, and university functions across the Texas Hill Country. Over 150 events catered in year one.
Menu Expansion
The menu grows to include hangry joe's hot chicken tenders, sliders, loaded fries, and three new heat levels including the notorious "Reaper" — a ghost pepper blend that comes with a waiver and a free milk.
